Turkey, artichoke heart, and honey-mustard sandwich

- 2 sandwiches
4 slices of St-Méthode homestyle barley bread
8 slices of turkey
¼ cup marinated artichoke hearts, roughly chopped
A few thin slices of red onion
¼ cup baby spinach
2 TBSP whole-grain mustard
1 TBSP mayonnaise
1 TBSP honey
½ TSP white wine vinegar
Salt and pepper
- Mix together all spread ingredients in a small bowl.
- Spread on bread slices, layer half the slices with ingredients in the order listed, then top each with one of the remaining slices.
- Cut in 2, if desired, and enjoy!
