Turkey, artichoke heart, and honey-mustard sandwich

4 slices of St-Méthode homestyle barley bread
8 slices of turkey
¼ cup marinated artichoke hearts, roughly chopped
A few thin slices of red onion
¼ cup baby spinach


2 TBSP whole-grain mustard
1 TBSP mayonnaise
1 TBSP honey
½ TSP white wine vinegar
Salt and pepper


  1. Mix together all spread ingredients in a small bowl.
  2. Spread on bread slices, layer half the slices with ingredients in the order listed, then top each with one of the remaining slices.
  3. Cut in 2, if desired, and enjoy!
