Tabbouleh-style crushed chickpeas sandwich

Ingredients

8 slices of St-Méthode oat Grand-Père homestyle bread
1 can (540 ml) chickpeas, rinsed and drained
2 TBSP Feta cheese, crumbled
¾ cup cherry tomatoes, quartered
2 TBSP Italian parsley, finely chopped
1 TBSP red onion, finely chopped
Zest of ½ lemon
¼ cup plain Greek-style yogurt
Salt and pepper

Preparation

  1. Place chickpeas in a medium-sized bowl and roughly crush using a fork.
  2. Mix together feta, tomatoes, parsley, red onion, lemon zest, and yogurt, then season to taste.
  3. Spread chickpea mixture on half the bread slices, then top with remaining slices. Cut in 2, if desired, and enjoy!
