Tabbouleh-style crushed chickpeas sandwich

8 slices of St-Méthode oat Grand-Père homestyle bread
1 can (540 ml) chickpeas, rinsed and drained
2 TBSP Feta cheese, crumbled
¾ cup cherry tomatoes, quartered
¾ cup cherry tomatoes, quartered
2 TBSP Italian parsley, finely chopped
1 TBSP red onion, finely chopped
1 TBSP red onion, finely chopped
Zest of ½ lemon
¼ cup plain Greek-style yogurt
Salt and pepper
- Place chickpeas in a medium-sized bowl and roughly crush using a fork.
- Mix together feta, tomatoes, parsley, red onion, lemon zest, and yogurt, then season to taste.
- Spread chickpea mixture on half the bread slices, then top with remaining slices. Cut in 2, if desired, and enjoy!
