French Toast with Eggs and Bacon

2 eggs
¼ cup of milk
4 slices of St-Méthode Integral Bread
2 tbsp of butter
8 slices of cooked bacon
1 avocado, sliced
2 tbsp of olive oil
4 eggs
1 cup of cheese curds
For the tomato salsa
2 Roma tomatoes, diced
1 shallot, chopped
¼ cup of basil, coarsely chopped
¼ cup of dill, coarsely chopped
¼ cup of parsley, coarsely chopped
1 tsp of vegetable spices
Salt and pepper to taste


  1. In a bowl, combine all the ingredients for the tomato salsa. Set aside in the fridge.
  2. In another bowl, beat 2 eggs with the milk. Dip each slice of bread into the mixture.
  3. In a large pan, melt the butter over medium heat. Brown the bread slices for 3 minutes; then, flip them over and continue cooking until golden brown.
  4. In another pan, heat the olive oil and fry the 4 other eggs.
  5. Place the slices of avocado and bacon on the bread, then top with the fried eggs. Finish with a topping of cheese curds and tomato salsa. Serve.
