Club Sandwich with Egg Salad, Ham, and Pesto

Ingredients

3 slices of St-Méthode Organic Integral Bread
4 slices of deli-style cooked ham
1 to 2 leaves of lettuce
 
Egg Salad
¼ cup of shredded cheddar cheese
2 hardboiled eggs, crushed with a fork
1 French shallot, finely chopped
2 tbsp of mayonnaise
Salt and pepper, to taste
 
Pesto Mayonnaise
2 tbsp of pesto, homemade or store-bought
1 tbsp of mayonnaise
1 tsp of lemon juice

Preparation

1. In a large bowl, combine the ingredients for the egg salad. Set aside.
2. In a small bowl, combine the ingredients for the pesto mayonnaise. Set aside.
3. Toast the slices of bread, then top one side of each slice with pesto mayonnaise.
4. Assemble the club sandwich as follows: bread, egg salad, bread, ham, lettuce, and bread.
5. Hold the club sandwich together with 4 toothpicks, cut in 4 and serve.
