Turkey and Apple Sandwich

Ingredients

Homemade Coleslaw:
625 ml (2½ cups) green cabbage, thinly sliced or shredded
½ a green onion, chopped
30 ml (2 tbsp) parsley, chopped
45 ml (3 tbsp) mayonnaise
22 ml (1½ tbsp) cider vinegar
Salt and ground pepper, to taste
 
8 slices St-Méthode White Loaf
20 ml (4 tsp) Dijon mustard
300 g (2/3 lb) smoked turkey, sliced
1 apple, sliced

Preparation

In a bowl, combine the ingredients for the coleslaw. Season to taste.
Spread the mustard on the slices of bread.
Top 4 slices of bread with some turkey, apple, and coleslaw.
Cover with the remaining slices of bread.
Cut each sandwich in half and serve.
