The Tricolour

- 10 ml butter
- 4 eggs
- 8 slices Campagnolo 100% Whole wheat loaf
- 80 ml mayonnaise
- 30 ml pesto
- 2 tomatoes, sliced
Cook the eggs in butter (fried or over-easy). Season.
Toast the bread.
Spread 4 slices with mayonnaise and pesto.
Add the tomatoes and eggs.
Spread the remaining slices with mayonnaise, close, cut and serve.
