The Tex-Mex

Ingredients

  • 2 tomatoes, diced
  • 1 small red onion, diced
  • 125 ml chopped coriander
  • 60 ml mayonnaise
  • 1 tin black beans, rinsed
  • 5 ml chilli powder
  • 2 ml cumin
  • Chillies or hot sauce (to taste)
  • 8 slices Campagnolo Golden loaf

Preparation

Mix the tomatoes, onion and coriander. Season.

Blend half the beans with half the mayonnaise and spices.

Heat the purée with the remaining beans and a little water.

Toast the bread.

Spread 4 slices with the bean purée, add the tomato mixture and spice to taste.

Spread the remaining slices with mayonnaise, close and serve.
