Delight BBQ Panini

Ingredients

  • 15 ml (1 tbsp) olive oil
  • 1 onion, chopped
  • 180 ml (3/4 cup) corn kernels
  • 500 ml (2 cups) cooked chicken, cubed
  • Salt and freshly ground pepper
  • 30 ml (2 tbsp) tomato paste
  • 30 ml (2 tbsp) honey
  • 10 ml (2 tsp) apple cider vinegar
  • 2 ml (1/2 tsp) Worcestershire sauce
  • 1 ml (1/4 tsp) each: dry mustard, garlic powder, onion powder, smoked paprika
  • 250 ml (1 cup) sharp cheddar cheese, grated
  • 250 ml (1 cup) cheese curds, coarsely chopped
  • 8 slices of Campagnolo Golden Loaf

Preparation

  1. Cooking the Aromatics: Heat the oil in a pan over medium heat and sauté the onion for 5 minutes, until tender.
     
  2. Preparing the Sauce: Meanwhile, in a small bowl, mix the tomato paste, honey, apple cider vinegar, Worcestershire sauce, and spices.
     
  3. Assembling the Filling: Add the corn and chicken to the pan, season generously, and heat for a few minutes. Stir in the sauce, ensuring all ingredients are well coated, then remove from heat. Add the cheeses and mix lightly until they begin to melt.
     
  4. Building the Sandwiches: Place 4 slices of bread on a work surface and evenly distribute the chicken mixture. Top with the remaining slices of bread.
     
  5. Panini Cooking: Preheat the panini oven to 350°F (180°C). Place the sandwiches inside, close, and cook for 5 minutes, until the bread is golden brown.
     
  6. Serving: Remove from the oven, cut in half, and serve immediately.
