Ingredients
- 15 ml (1 tbsp) olive oil
- 1 onion, chopped
- 180 ml (3/4 cup) corn kernels
- 500 ml (2 cups) cooked chicken, cubed
- Salt and freshly ground pepper
- 30 ml (2 tbsp) tomato paste
- 30 ml (2 tbsp) honey
- 10 ml (2 tsp) apple cider vinegar
- 2 ml (1/2 tsp) Worcestershire sauce
- 1 ml (1/4 tsp) each: dry mustard, garlic powder, onion powder, smoked paprika
- 250 ml (1 cup) sharp cheddar cheese, grated
- 250 ml (1 cup) cheese curds, coarsely chopped
- 8 slices of Campagnolo Golden Loaf
Preparation
- Cooking the Aromatics: Heat the oil in a pan over medium heat and sauté the onion for 5 minutes, until tender.
- Preparing the Sauce: Meanwhile, in a small bowl, mix the tomato paste, honey, apple cider vinegar, Worcestershire sauce, and spices.
- Assembling the Filling: Add the corn and chicken to the pan, season generously, and heat for a few minutes. Stir in the sauce, ensuring all ingredients are well coated, then remove from heat. Add the cheeses and mix lightly until they begin to melt.
- Building the Sandwiches: Place 4 slices of bread on a work surface and evenly distribute the chicken mixture. Top with the remaining slices of bread.
- Panini Cooking: Preheat the panini oven to 350°F (180°C). Place the sandwiches inside, close, and cook for 5 minutes, until the bread is golden brown.
- Serving: Remove from the oven, cut in half, and serve immediately.
