Royal Bread Roll with Mushrooms & Camembert

8 slices of Le Royal bread from Boulangerie St-Méthode
¼ cup butter, at room temperature
For the filling
2 tbsp butter
2 cups shiitake mushrooms
2 tbsp fresh chives, chopped
½ cup double cream (35%)
16 slices of Camembert
Salt and pepper, to taste
- Flatten the bread slices using a rolling pin. Butter one side of each slice and set aside.
- In a frying pan, melt the butter over medium heat, then cook the mushrooms for 3 minutes. Add the chives and continue cooking for another 2 minutes. Season and stir in the cream. Cook for 2 minutes more.
- In a large frying pan over medium-low heat, cook the bread slices buttered side down. Place 2 slices of Camembert on each slice and spoon ¼ cup of the mushroom filling over them. Once the bread is golden, remove from the heat and roll up each slice. Allow to cool slightly and enjoy.
Tips
Can be frozen. Keeps for 3 to 4 days in the fridge.
