Roasted broccoli and feta Toast

30 ml (2 tbsp) sunflower oil
1 litre (4 cups) chopped broccoli
Salt and pepper
2 ml (½ tsp) sumac
90 g (3 oz) crumbled feta
10 ml (2 tsp) butter
4 eggs
4 slices of St-Méthode Quinoa Bread
- In a large frying pan over medium heat, cook the broccoli in oil for 10 minutes. Season to taste.
- Blend half the broccoli using a hand blender.
- In another pan, melt the butter over medium heat and cook the eggs (fried or sunny side up). Season.
- Toast the bread slices.
- Spread the puréed broccoli over the toast, top with crumbled feta and cooked broccoli.
- Sprinkle with sumac and add an egg to each toast. Enjoy!
