Roasted broccoli and feta Toast

Ingredients

30 ml (2 tbsp) sunflower oil

1 litre (4 cups) chopped broccoli

Salt and pepper

2 ml (½ tsp) sumac

90 g (3 oz) crumbled feta

10 ml (2 tsp) butter

4 eggs

4 slices of St-Méthode Quinoa Bread

Preparation

  1. In a large frying pan over medium heat, cook the broccoli in oil for 10 minutes. Season to taste.
  2. Blend half the broccoli using a hand blender.
  3. In another pan, melt the butter over medium heat and cook the eggs (fried or sunny side up). Season.
  4. Toast the bread slices.
  5. Spread the puréed broccoli over the toast, top with crumbled feta and cooked broccoli.
  6. Sprinkle with sumac and add an egg to each toast. Enjoy!
