Old-Fashioned Banana Bread Pudding

Ingredients

  • 3 tbsp of melted butter
  • 4 eggs
  • 1 ½ cups of milk
  • ½ cup of sugar
  • 1 tsp of vanilla extract
  • 8 slices of St-Méthode 9 Grains Bread, cubed
  • 3 ripe bananas, mashed with a fork

Preparation

  1. Preheat the oven to 350° F and place a rack in the centre position. Pour the melted butter into a square baking dish, spreading it to cover the entire inside of the dish.
  2. In a bowl, combine the eggs, milk, and vanilla extract. Whisk together thoroughly and then add the bread cubes. Mix well to coat the bread and set aside for 30 minutes.
  3. Add the mashed bananas to the bread, mix, then transfer to the baking dish.
  4. Cook in the oven for about 35 minutes, until the pudding is cooked through and golden (see note).
  5. Serve with banana slices, whipped cream, and caramel.

Tips
If a few more minutes of cooking are required, cover the bread pudding with aluminium foil to avoid burning the top.
