Oat milk and apple-squash butter French toast

Slow cooker apple-squash butter
- 1.75 litres (7 cups) apples, peeled and diced
- 1.25 litres (5 cups) butternut or acorn squashed, diced
- 180 ml (3/4 cup) water
- 45 ml (3 TBSP) honey or maple syrup
Granola
- 375 ml (1 1/2 cup) multigrain flakes (oat, barley, wheat, rye, khorosan, etc.)
- 30 ml (2 TBSP) flax seeds
- 60 ml (1/4 cup) pumpkin seeds
- 60 ml (1/4 cup) dried cranberries
- 15 ml (1 TBSP) sunflower, sesame, or canola oil
- 45 ml (3 TBSP) honey or maple syrup
- pinch of sea salt
Homemade oat milk
- 250 ml (1 cup) oat flakes
- 1 litre (4 cups) filtered cold water
- 5 ml (1 TSP) honey
- pinch of sea salt
French toast
- 4 eggs
- 250 ml (1 cup) oat milk
- 15 ml (1 TBSP) raw sugar, honey, or maple syrup
- 2 to 5 ml (1/2 to 1 TSP) clover extract
- 8 slices of St-Méthode 9-grain bread
- Oil or butter for cooking
Apple-squash butter
- Place diced apple and squash into a slow cooker.
- Add water and cook at low temperature for 12 to 16 hours, or until tender.
- Use an electric mixer to blend until smooth.
- Add honey, then cook another 2 to 3 hours until mixture is thick and caramelized.
Granola
- Mix all ingredients together in a bowl.
- Spread on a tray lined with parchment paper or a silicone sheet.
- Cook in oven at 160°C (325°F) for 25 minutes or until mixture is golden and crunchy.
Homemade oat milk
- In a mixer, blend together oat flakes, water, honey, and salt for 1 to 2 minutes.
- Filter using a nut milk bag, fine sieve, or cheesecloth.
- Pour into a jar or bottle and refrigerate.
French toast
- In a bowl, beat eggs with oat milk, sugar, and clover extract.
- Heat 2 pans over medium heat, then add oil or butter.
- Dip bread slices into mixture a few seconds per side, then add one to each pan.
- Cook for 3 to 5 minutes per side. Set aside and keep warm.
- Repeat with remaining slices.
- Place a French toast slice on each plate. Garnish with at least 80 ml (1/3 cup) of apple-squash butter, top with another French toast slice, more apple-squash butter, about 60 ml (1/4 cup) or granola, diced apple, and a drizzle of honey or maple syrup.
- Top with slices of old cheddar for a gourmet experience.
