Grilled Cheese Sandwich with Cajun Chicken, Avocado, Tomato, and Canadian Orange Cheddar

Ingredients

  • 8 slices Campagnolo 100% Whole Wheat Loaf
  • 1 large or 2 small chicken breasts
  • 2 tbsp Cajun spice
  • Salt to taste
  • Zest and juice of one (1) lime
  • 1 tbsp olive oil
  • 1 large tomato of your choice
  • 1 avocado
  • 240 g sliced orange cheddar (Cracker Barrel style)

Preparation

1. Spread out the 8 slices of Campagnolo 100% Whole Wheat Loaf.
2. Cut the chicken breast in two horizontally. Coat the chicken on all sides with Cajun spice, lime zest, and lime juice; season with salt. Heat the olive oil in a pan over medium heat. Cook the chicken in the pan for 8 minutes on each side or until the centre is well-done.
3. Place a slice of cheese on 4 of the slices of bread.
4. Top the same 4 slices of bread with the ingredients in the following order: tomatoes, avocado, sliced chicken, and another slice of cheese.
5. Close the sandwiches with the remaining slices of bread.
6. Grill to your preferred doneness in a panini press or a pan. Lightly butter the bread before grilling.
