Gourmet Apple Crumble

- 4 Quebec apples (Cortland or Empire), peeled and sliced
- 4 slices of Le Royal bread
- 3/4 cup of brown sugar + 1/4 cup for the topping
- 1 teaspoon of cinnamon
- 1/2 teaspoon of nutmeg
- 1 tablespoon of lemon juice
- 1/2 cup (115g) of fresh butter, cut into small pieces
- 1/4 cup of melted butter for the topping
- 1/4 cup of maple syrup + 2 tablespoons for the topping
- 1 teaspoon of vanilla extract
- 1/4 cup of flour
- 1/4 cup of 35% cream
- 1/2 cup of coarsely chopped pecans
- Preheat the oven to 180°C (350°F).
- In a large bowl, mix the apple slices with the lemon juice, 1/4 cup of brown sugar, cinnamon, and nutmeg. Set aside.
- Cut the bread slices into 9 squares each.
- In another bowl, mix the bread, the remaining brown sugar, flour, maple syrup, vanilla extract, and butter pieces.
- Use your fingers to incorporate the butter until the mixture becomes coarse and crumbly.
Maple Cream Sauce Preparation:
- In a small saucepan, heat the heavy cream with 2 tablespoons of maple syrup and 1/4 cup of melted butter over low heat until well blended. Set aside.
