Gourmet Apple Crumble

Ingredients

  • 4 Quebec apples (Cortland or Empire), peeled and sliced
  • 4 slices of Le Royal bread
  • 3/4 cup of brown sugar + 1/4 cup for the topping
  • 1 teaspoon of cinnamon
  • 1/2 teaspoon of nutmeg
  • 1 tablespoon of lemon juice
  • 1/2 cup (115g) of fresh butter, cut into small pieces
  • 1/4 cup of melted butter for the topping
  • 1/4 cup of maple syrup + 2 tablespoons for the topping
  • 1 teaspoon of vanilla extract
  • 1/4 cup of flour
  • 1/4 cup of 35% cream
  • 1/2 cup of coarsely chopped pecans

Preparation

  1. Preheat the oven to 180°C (350°F).
  2. In a large bowl, mix the apple slices with the lemon juice, 1/4 cup of brown sugar, cinnamon, and nutmeg. Set aside.
  3. Cut the bread slices into 9 squares each.
  4. In another bowl, mix the bread, the remaining brown sugar, flour, maple syrup, vanilla extract, and butter pieces.
  5. Use your fingers to incorporate the butter until the mixture becomes coarse and crumbly.

Maple Cream Sauce Preparation:

  1. In a small saucepan, heat the heavy cream with 2 tablespoons of maple syrup and 1/4 cup of melted butter over low heat until well blended. Set aside.
