Grilled Cheese Sandwich with Tomato, Mozzarella, and Pesto

5 minutes - 4 sandwiches
8 slices Campagnolo White Loaf
1 large tomato of your choice
1 ball of mozzarella di buffala
8 tbsp pesto, homemade or store-bought
1. Spread out the 8 slices of Campagnolo White Loaf.
2. Spread some pesto on each slice of bread (about 1 tbsp per slice).
3. Cut the tomato in two and slice each half into 8 slices.
4. Place the tomato slices on four of the slices of bread.
5. Cut the mozzarella in the same way and place the slices on top of the tomato.
6. Season with salt and pepper.
7. Close the sandwich with the remaining pesto-topped slices of bread, keeping the pesto sides on the inside of the sandwiches.
8. Grill to your preferred doneness in a panini press or a pan. Lightly butter the bread before grilling.
