Egg-in-a-Hole with Feta and Herbs

  • 15 ml (1 tbsp) butter
  • 1 slice of bread
  • 1 egg
  • Feta, to taste
  • Herbs, to taste
  • Salt and pepper


  1. Using a pastry cutter, make a hole in the centre of the slice of bread.
  2. In a pan over medium heat, melt the butter and toast the bread on one side. Turn over the bread and break the egg into the hole. Season and cover. Cook for 1 to 2 minutes or until the egg white is cooked through.
  3. Transfer to a plate and top with feta or goat cheese and herbs or micro-greens.
