Egg-in-a-Hole with Feta and Herbs

5 minutes - 1 portion
- 15 ml (1 tbsp) butter
- 1 slice of bread
- 1 egg
- Feta, to taste
- Herbs, to taste
- Salt and pepper
- Using a pastry cutter, make a hole in the centre of the slice of bread.
- In a pan over medium heat, melt the butter and toast the bread on one side. Turn over the bread and break the egg into the hole. Season and cover. Cook for 1 to 2 minutes or until the egg white is cooked through.
- Transfer to a plate and top with feta or goat cheese and herbs or micro-greens.
