The classic tuna

Ingredients

125 ml (½ cup) softened cream cheese

60 ml (¼ cup) mayonnaise

80 ml (⅓ cup) finely chopped red onion

500 ml (2 cups) roughly chopped baby spinach

60 ml (¼ cup) red pepper spread

2 x 184 g (6 oz) tins of drained tuna

8 slices of Club 100% whole wheat loaf

Salt and pepper

Preparation

  1. In a large bowl, mix cream cheese with mayonnaise.
  2. Add red onion, spinach, red pepper spread, and tuna.
  3. Mix well and season to taste.
  4. Spread mixture over 4 slices of bread and top with the remaining slices.
  5. Cut in half and serve or pack in a lunchbox.
