My healthy post-yoga French toast

- 2 portions
- 4 slices of 100% Whole Grain with Spouted Wheat, No Fat, No Sugar Added Bread
- 125 ml (½ cup) ricotta
- 10 ml (2 tsp.) honey
- 1 pinch nutmeg
- 60 ml (4 tbsp.) milk
- 3 ml (½ tsp.) vanilla
- 3 ml (½ tsp.) cinnamon
- 2 eggs, beaten
- 2 fresh figs, quartered
- 65 ml (¼ cup) unsalted pistachios
- Honey to taste, for serving
In a small bowl, combine the ricotta, honey, and nutmeg. Set aside.
In another bowl, mix the milk, vanilla, and cinnamon.
Quickly dip each slice of bread in the egg mixture, and then cook on each side in a lightly oiled pan until golden.
Place 2 slices of French toast in each serving plate, top with the ricotta mixture, fresh quarter figs, and pistachios. Serve with honey on the side.
