Guacamole and Poached Egg on Toast

- 1 portion
1 Avocado, mashed
1/2 small onion, diced small
5 cherry tomatoes, sliced into 1/8ths.
1 sheet of roasted seaweed, coarsely chopped
1/2 handful of coriander, coarsely chopped
1 slice of les Grains St-Methode 9 grain bread.
1. In a bowl, combine the mashed avocado, the diced onion and the cherry tomatoes, the juice of 1/4 lime,
and mix. Add salt and pepper to taste.
2. In a pot, bring water to a boil and use a whisk to make a whirlpool in the water. Lift out the egg and crack
the egg in the pot. Because the water is still turning, the egg will layer onto itself and make a poached
egg. If you don't want to go through the hassle of making a poached egg, a fried egg on this sandwich is
just as good.
3. Toast the slice of Set Methode bread
4. To assemble: layer the toasted bread with the Guacamole mixture. Add the egg on top, the coriander and
the roasted seaweed. If necessary, add more salt and pepper.
