Grilled-cheese sticks and homemade tomato sauce

For the Grilled-cheese:
• 8 slices of St-Méthode 100% whole wheat bread
• 180 g mozzarella (8 slices of sandwich mozzarella)
• Some butter for cooking
• ¼ cup of olive oil
• 1 tsp. of basil
• ½ teaspoon of garlic powder
• Salt and pepper, to taste
Tomato sauce:
• ¼ cup of white onion, finely chopped
• 1 clove garlic, finely minced
• 2 tomato coulis
• 1 teaspoon fresh or dried parsley
• 1 teaspoon fresh or dried basil
• 1 dried bay leaf
• Salt and pepper, to taste


Tomato sauce (see “Tip”)
1. In a small saucepan, sauté onions in a little oil over medium to high heat.
2. Once the onions are translucent, add garlic. Sauté 1 minute then add the remaining ingredients: tomato sauce, parsley, basil and bay leaf. Season with salt and pepper to taste.
3. Raise the sauce to a boil, then reduce heat. Simmer 10 to 15 minutes. Then let cool. Set aside. (If you see that it does not cool fast enough, place in the refrigerator)
1. In a large skillet, heat the butter. (If necessary add a knob of butter between each grilled-cheese)
2. Meanwhile, prepare the grilled-cheese. Place 2 slices of mozzarella cheese between 2 slices of bread. Repeat to make 4 sandwiches. Set aside.
3. In a small bowl, mix oil, basil, garlic powder, salt and pepper. This will be the mixture to brush the grilled-cheese.
4. Brush both sides of the sandwich with the oil mixture.
5. Transfer a sandwich or two at a time into the hot pan. Grill on both sides to medium-high heat with a cover so that the cheese melts. Repeat for all sandwiches.
6. After grilling, cut the sandwiches to form sticks. Set aside.
7. Serve the hot sticks with tomato sauce warm or cold.

I prefer to make the tomato sauce before the grilled-cheese to give it time to thicken and cool-off. Then the grilled-cheese can be served hot and you won’t have to wait for the sauce!
