Blackberries Toastie

Ingredients
- 8 slices of Le Royal bread
- Butter
- 2 cups of fresh blackberries
- 2 tablespoons of maple honey (or Quebec honey)
- 300g of semi-firm Quebec cheese (such as Oka or aged cheddar)
- 1 tablespoon of balsamic vinegar
Preparation
- In a bowl, mix the blackberries with the maple honey and balsamic vinegar. Lightly crush a few blackberries to release some juice while leaving most whole. Let marinate for 10 minutes.
- Butter one side of each slice of bread.
- Place 4 slices of bread, buttered side down, on a work surface.
- Evenly distribute the cheese over the 4 slices of bread.
- Add a generous layer of marinated blackberries over the cheese.
- Cover each sandwich with the remaining 4 slices of bread, buttered side up.
- Heat a pan over medium heat.
- Grill the sandwiches until the bread is golden and crispy, and the cheese is melted, about 3-4 minutes per side. You can cover the pan while cooking to help the cheese melt.
- Remove the sandwiches from the pan and let rest for a minute before cutting them in half.
- Serve immediately and enjoy!
