Grilled Vegetable (Simple & Yummy) Summer Toast

Ingredients

1 slice of Campagnolo 9 Whole Grain loaf

2 tbsp of pesto (store bought or homemade)

2 tbsp of goat cheese

2 tbsp of vegetable oil

½ red pepper

¼ yellow pepper

3 thin slices of eggplant

½ zucchini, thinly sliced lengthwise

Preparation

In a saucepan with a bit of vegetable oil of your choice (I chose pistachio oil), brown the vegetables on each side until they are tender but still slightly crunchy. Remove the vegetables and grill the bread in the same pan, adding a dash of oil and light dusting of sea salt. Remove the bread once grilled. Spread with pesto, then add goat cheese, and then eggplant, peppers and zucchini.

Tips
* For those who aren’t fans of goat cheese, you could easily replace it by feta cheese. ** For fans of onions, you can also add some to the mix. In fact, you could easily create a toast with everything you have in the house – asparagus, tomatoes, radish, avocado, etc.
